Cocoa Liquor / Cocoa Mass

Cocoa liquor (or cocoa mass) is a very important ingredient in chocolate. Obtained from the transformation of the cocoa bean, and besides the fact that it is the ingredient present in the greatest quantity in dark chocolates, it is what gives chocolate its aromatic particularities and its characteristic taste.

The taste of chocolate comes in part from the land where the cocoa is grown. Thus, chocolate bars made with beans from a single region or a single country (single-origin chocolate) will each have their own aromas and flavors.
